Potato Curry is a spicy Indian dish that is delicious and easy to make. It is also very healthy. We added chicken to this recipe but it can be taken out to make a perfect vegetarian dish. Chicken and Potato Curry can be enjoyed alone or along with a bowl of boiled rice.

INGREDIENTS
- 600g Irish Potatoes, Peeled and Cubed
- 500g Chicken Pieces, Diced
- 2 Tablespoons Nosak Famili Vegetable Oil
- 3 Teaspoons Curry Powder
- 1 Medium Onion, Diced
- 3 Cloves Garlic, Minced
- 1 Teaspoon Fresh Ginger, Minced
- 1 Teaspoon Turmeric Powder
- 1 Teaspoon Cayenne
- 1 Teaspoons Cumin/Chilli Powder
- ½ Teaspoon Black Pepper
- 2 Seasoning Cubes
- Salt to Taste
- 6 Large Tomatoes, Diced/Tomato Paste
- ½ Can Coconut milk (Optional)
- Fresh Parsley/Scent leaves/Spinach, Chopped
COOKING DIRECTION
- Heat the oil in a large pot over medium heat until shimmering. Add the onion and sauté for about 3 minutes, until translucent.
- Add the ginger and garlic, sauté for about 2 minutes, until fragrant.
- Add the curry powder, turmeric, cayenne, cumin/chilli powder and black pepper. Stir and cook for about 2 minutes until the spices are fragrant.
- Then add the potatoes and mix well until well-coated in spices. Cover and allow to simmer for 2 minutes.
- Add your diced chicken cubes and stir well to incorporate. Add the seasoning and salt, then allow simmer for 3 minutes.
- Add the tomatoes, then pour in the coconut milk and stir to combine. Add water if necessary.
- Bring the mixture to a boil and reduce heat once it starts bubbling. Cook for 15-20 minutes, until the potatoes and chicken are tender enough to your taste. Adjust taste with spices and seasoning if necessary.
- Sprinkle fresh parsley/scent leaves/spinach. Allow to simmer on low heat for 2 minutes.
- Serve hot with boiled rice or enjoy alone.
